Amish Breakfast Casserole & My Day

Well today was a good day. My mil had to have back surgery and she did fine and is now home and seems to be doing good. Other then that I spent the day not doing much well I did clean, made some tuna fish sandwiches, and gave the dog a bath. I will be glad when I don't have to give her anymore medication it is getting old but lucky for me Lady takes her meds real well. We just wrap them up in some lunch meat and she just eats it up. The steroids she is on is making her drink and pee alot and if I would keep food down for her she would eat all day. Last night for dinner I made a Amish Breakfast Casserole. It was good and my husband has been eating the left overs for breakfast so he is liking that. So here is the recipe incase I haven't shared it before.

Amish Breakfast Casserole
1 pound of sliced bacon, diced (or sausage)
1 med. sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown, thawed
2 cups shredded cheddar cheese
1 1/2 cup small curd cottage cheese
1 1/4 cup shredded Swiss cheese
Cook bacon and onion until bacon is crisp, drain. In a bowl combine the remaining ingredients, stir in bacon mixture. Transfer to greased 13 in x 9 in x 2 in baking dish.
Bake uncovered at 350 degrees for 35 to 40 min. or until bubbly. Let stand 10 min before cutting.

Lady Update

Well I took Lady to the doctor and well she didn't really say what was wrong with her but she was running a fever. She put her on a antibiotic called Cephlexin and a steroid called Prednisone for her back. She was weighed and well I was shocked. Last time she went to the vet was 1 year ago when we got her and she weighed 13lbs now she is up to 18lbs!! I knew she had gained some weight but I was thinking maybe 2lbs or so. She is also not allowed to go up and down the stairs or jump for at least a month. We are also going to not give her so many treats and try to get some weight off of her. I would hate for her back to always be hurting her because we feed her to much. Well that is about it so I guess I will go and get Ian dressed for church and me ready to watch Ghost Whisperer. Hubby is getting a pizza tonight well because I am being lazy :)

Some Stuff From The Past Week

Well this past week has been ok maybe not the best week but I guess not the worse. Lady is still down and not feeling good. I put a heating pad on her back hoping that will help with maybe any pain she is in. She seems to like it. She just loves her bed and her pink dog.



Bradon is such a silly sweet boy that just loves spongebob see his craby patty he made.



He also tried to dress himself tonight.

After I took this picture I gave him a bath and cut his hair. I just got this boys hair cut and now it is back down in his eyes. I will share the story why Bradon can't get his hair cut to short for another day :)

Lady Girl

Lady is not doing well and my worst fear I think has come true I think Lady has hurt her back. We at first thought maybe she hurt her foot or something but then tonight while my husband was petting her she yelped in pain when he touched her back. She has not been able to go down the stairs to go outside we have been picking her up to take her out and in. I guess I will be taking her to to vet Tuesday when they open. She has been acting funny for about the past week, just not being herself. No running, no playing, no jumping in my kitchen chairs, and not eating as much. Friday she seemed to be getting better but then she tried to jump on my bed and we heard her yelp in pain. Oh I hope that my sweet Lady hasn't done something to her back that we can't fix easily. This house would not be the same without my Lady girl. I just want to cry typing this because she is such a sweet heart.

Cactus

Last Friday in the store Ian seen some cactus and really wanted one. I don't understand why but for some reason and for some time Ian has been on a cactus kick. I asked him why would he want one? He can't touch it or play with it. He just simply told me that he just really wanted one. Well so I got that dumb cactus and now it sits in the kitchen. I don't like have a plant that I am afraid of. With my luck we will have the cactus for many years.

One Unhappy Girl

Today was a very cold day I don't think it got out of the low 30's so I decided to put Lady's sweater on her when she went outside. I got it for her because every time she goes outside she is acting like she is going to freeze to death. Well after I put it on her she just gave me a look like "oh great not the sweater I hate this thing!" She didn't want to walk down the stairs and then when I went to let her back in she acted like she couldn't walk up them. She came into the house and got in her bed and she layed their all day just giving me dirty looks.



So tonight when my hubby came home he asked what was wrong with Lady? I told him she is all mad about wearing her sweater and then I told him to go ahead and take it off her. Well once the sweater came off she turned into a different dog. She was all happy jumping around and back to her old self.





She is a odd little dog but we love her :)

2010

Somethings I am going to do more of this year.

  1. Blog more.
  2. Drink more water. Well I am going to start drinking water I just don't like it so I never drink it.
  3. Start my yoga again. This time I am not going to stop.
  4. Keep my house cleaner. My house is clean but their is alot of stuff I could do more of.
  5. Teach Ian to tie his shoes. The boy acts like his fingers are made out of butter and he doesn't know how to use them.
  6. Try to save money.
  7. Pay off some bills.
  8. Take more pictures. Ofcourse by some standers I take to many.

I am sure their are more things I could do this year but for right now that is all I can think of. I hope I can at least do some of those things.

Oh and I wouldn't of believed it if I wouldn't have seen if for myself but it was snowing today! Not alot and not enough to make any difference but I seen flakes falling from the sky. Here in South East Arkansas we hardly never see snow. We get cold in the winter but we never seem to get cold enough to get snow just rain. The temps this week will be very cold and they are calling for snow showers on Thursday and then the high on Friday is only going to be in the 20's. Oh I hope it snows I don't like the cold but I do love a little snow :)
